We have turned the iconic Christmas Pavlova into a delicious gelato cake. One the inside is a milk gelato centre with a disc of frozen raspberry coulis; coated on the outside with a white chocolate and passionfruit glaze and topped with a crown of crunchy baked meringue, sprinkled with freeze dried raspberries.
